Sun-Dried Chicken Tomato Basil Orzo
INGREDIENTS:
- Chicken – ½ kg (boneless, skinless and trimmed chicken breast)
- Pepper -1/4 teaspoon
- Water – 1 cup
- Plum tomato – 1 (diced)
- Sun dried tomato – ½ cup (chopped)
- Orzo – ¼ kg
- Romano cheese – ½ cup (finely shredded)
- Artichoke hearts – ½ kg (frozen)
- Salt – to taste
- Olive oil – 2 tablespoon
- Red wine vinegar – 1 tablespoon
- Marjoram – 3 teaspoon
- Garlic – 1 glove
PREPARATION:
- Cook orzo in a pan of boiling water for 10 minutes. Then drain and rinse it.
- 1 cup water, 1/4 cup sun-dried tomatoes, plum tomato, garlic, 2 teaspoons marjoram, vinegar and 2 teaspoons oil in a blender. Blend it.
- Add salt and pepper in the chicken for seasoning. Then add 1 tablespoon oil in a large pan over medium heat. Add chicken and cook until 5 minutes per side. Transfer it in a plate.
- Pour the tomato sauce into the pan and boil it. Add 1/4 cup sun-dried tomatoes to it along with the orzo, artichoke hearts and 6 tablespoons cheese. Cook it for 2 minutes. Divide among the 4 plates.
- Slice the chicken. Top each portion of pasta with sliced chicken, 2 tablespoons of the reserved tomato sauce and garnish it with sprinkle remaining cheese and marjoram. And serve it.
